Ingredients
  

  • 3 large eggs
  • ½ cup honey or maple syrup (instead of sugar)
  • 1 ½ cups unsweetened almond milk (or any plant-based milk)
  • ½ cup unsweetened applesauce (instead of oil)
  • 4 tbsp unsweetened cocoa powder
  • 1 tsp vanilla extract
  • 2 ½ cup whole wheat flour or almond flour
  • 1 tbsp baking powder
  • 1 tsp coconut oil (instead of butter)

Method
 

  1. In a large bowl, whisk together almond milk, applesauce, cocoa powder, and honey/maple syrup until well combined.
  2. Set aside 1 cup of this mixture for later use.
  3. Add eggs and vanilla extract to the remaining mixture and stir well.
  4. Sift whole wheat flour and baking powder together, then gradually add to the wet mixture, stirring until smooth.
  5. Lightly grease a cake pan with coconut oil and pour in the batter.
  6. Bake in a preheated oven at 350°F (180°C) for 25-30 minutes, or until a toothpick comes out clean.
  7. Let the cake cool for 5 minutes, then poke holes in the surface with a toothpick or knife.
  8. Pour the reserved liquid mixture over the cake, allowing it to soak in.
  9. Optionally, top with a drizzle of dark chocolate (70%+ cocoa) or fresh fruit for a healthy garnish.
